6 lbs chicken breast, boneless, skinless, halved
2 16oz can pineapple slices, drained
2 15 oz cans manderin oranges, drained
4 tbsp cornstarch
4 tbsp brown sugar, packed
4 tbsp lemon juice
1/2 tsp salt
1/2 tsp ground ginger
Directions
Combine all ingredients in the crock pot. Stir Well. Cover and cook on low for 6 to 8 hours or on high for 3 hours. Makes 16 servings.

We love chicken, and I wanted to mix it up! This recipe was fantastic and light. I used 1 tbsp of cornstarch, left out the oranges, added light soy sauce, added chopped fresh red pepper and fresh snow peas, and topped it on rice! My family loved it and we will use it regularly!
