Ingredients

    1/4 cup flour
    1/2 tsp baking powder
    5 eggs
    1 cup small curd, fat free cottage cheese
    1 cup grated jack cheese (use pepper jack for extra spice and flavor!)
    6 oz. diced green mild chilies
    1 cup corn
    Salt & pepper to taste

Directions

Preheat oven to 350*F.
Grease (spray) 9X9" baking dish.
Mix all the ingredients together, pour into pan and bake for 40-45 minutes.

    Fantastic recipe! I didn't have any jack cheese, so I subbed cheddar and it was great. I also used 2 whole eggs and 6 egg whites instead of all whole eggs. Turned out terrific, definately will be making this again for the flavor and the high protein content. Thanks! - 9/26/09

    Very good. My son and I made this for a light lunch. We used turkey sausage and omitted the corn and cottage cheese. We topped it off with salsa. Yum. - 4/16/07

    Delicious & satisfying. I added wheat germ to boost fiber. Great when you want something cheesy and gooey! Add salsa & tortilla for others in household. My macho husband loved it!!!!!!! - 3/21/07
