Ingredients

    1 cup steel cut oats (not rolled oats)
    4 cups water
    2 small or one large apple, peeled, cored, and chopped
    1/2 cup raisins
    1 Tbs cinnamon
    1 tsp vanilla extract

Directions

makes 6 one-cup servings.

Place all ingredients in slow-cooker and stir to mix. Turn on low and leave overnight. I use a small 2 quart crockpot, but I have also made it in a large one.

This recipe is very satisfying - the cooking method makes it very creamy (no need for milk) and the fruit makes it sweet (no need for added sugar or sweetener!) Even my kids love this.

    This is delicious! I added 1 tablespoonful of flaxseed meal and 1 banana to the oatmeal, after it was cooked and served it with vanilla soymilk. This is definitely a keeper. Mine did not come out mushy, but different brands of crock pots require different amounts of liquid. Mine is an old Rival - 1/22/10

    Easy recipe. Made this for Girlfriends' weekend away. It was a hit! Used old fashioned oats; will try steel cut next time and use cooking spray on inside of the crockpot before adding the ingredients. Also had an 'Oatmeal bar' with dried cherries, craisins and nuts to add as desired. Thanks! - 3/6/11

    There are 2 recipes with the same name, I mixed up with quick cooked oats when this one called for slow cooked oats. Half way through to this one I added 2 tbsp of brown sugar. I let it cook for about 6 hours. I will try it again, bc/ I am sure it will be better with slow oats. - 7/20/09

    I loved having it ready first thing in the morning, but it made it so mushy. I also thought there should be less liquid in it. I may play with is some more. - 2/6/08

    O.K.
    Didn't like the consistency and the cooked raisins didn't add sweetness as I has hoped. Don't try crockpot ting on high for half the time either as it will burn. - 7/24/12
