Introduction

Ingredients

    1 tbsp sesame oil
    18 oz boned and skinless chicken
    1 cup onion, chopped
    1 tbsp garlic, minced
    1 tbsp curry powder
    1/2 tsp black pepper
    1 tsp red pepper flakes
    6 cups fat free chicken broth
    1/2 cup tomato paste
    2 cups stewed tomatoes
    1/2 cup peanut butter

Directions

Heat sesame oil over medium heat in a large pot and saute' chicken.
Add onions and garlic and cook until onions become translucent and then add all other ingredients.
Cook until heated but do not boil.
Serving size is 1-1/2 cups.

    This soup was OK. I found it needed...something, and ended up adding a bit of soy sauce, chili powder, and horseradish to combat the lack of something. It was all bottom notes and no top notes. It is worth trying once, but I don't think I'll try it again. - 10/8/08

    DH said it's some of the best flavors he's had on a long time. He really likes his PB. Decreased the black and red peppers to half amounts, so kids could enjoy too. Also decreased broth, and had it as a curry with basmati rice. Really lovely. - 8/24/08

    I completely agree with ONLYPLAYING this recipe was OK, but needed something. I couldn't put my finger on it - coconut milk maybe? soy sauce? I don't know... This is the second night I'm eating this and I don't think I'm going to finish the rest of the batch. - 4/26/10

    This was unbelievable! I poured my serving over 1/2 a cup of brown rice, 1/2 cup of sauteed onions, and 1 cup of sauteed zucchini. It was delicious and similar to gumbo. I'll make it once a month. - 9/27/09

    Oh my GOSH, this is good!!! I used Sriracha Hot Chili sauce instead of the black pepper and red pepper flakes ...this is as good as anything I've been served in a restaurant! I think next time I'll add some lemon grass and prawns. THANK YOU for sharing! NUMMY NUMMY! - 3/8/08

    I made this devastatingly delicious meal last night. I cut the chicken stock in half to make it a thicker sauce to serve over rice. Sauteed some zucchini sprinkled with Mrs. Dash and had a heavenly feast. LOVED this and am having leftovers for lunch right now. Thank you! - 3/5/08

    This soup was GREAT! All my friends I had invited for dinner loved it and said it tasted so good it was like eating in a restaurant. I also kept more tomato paste and I used organic crunchy peanut butter, it was delicious! I would definitely make it again! - 11/4/07

    I cut the recipe in half, but accidently kept in the same amount of tomato paste; very thick! We really loved it. Creamy, thick, and nice and spicy. Not sure what I expected from this recipe, but I did not expect something with so few ingredients to be so tasty. yum yum! - 7/30/07
