Introduction

Omelet packed with veggies and flavor. Omelet packed with veggies and flavor.
Number of Servings: 4

Ingredients

    4 large eggs
    1 cup onions
    1 cup bell peppers
    100 grams of black olives
    1 cup mushrooms
    2 pats of low fat margarine

Tips

Garnish with green onions, if you choose.


Directions

Dice all veggies up.
Beat eggs together until frothy.
Melt the margarine.
Fry up the veggies until slightly tender.
Pour the egg mixture over the veggies.
Cook until eggs are thoroughly done and serve immediately.

    I FIX MY ALL MY EGGS IN MICROWAVE TO AVOID HAVING TO USE ANY OIL,MARG OR BUTTER. I ADD NO FAT SKIM MILK(1OZ PER EGG) TO LIGHTEN AND FLUFF IT MORE .LOVE MY EGGS AND VEGETABLES.ALSO USE GREEN,RED,YELLOW AND HOT PEPPERS TO SPICE IT UP A BIT.CAN ADD LOW FAT CHEESE IN PLACE OF OIL(ETC) FOR A MORE FLAVOR - 4/28/09

    the beauty of this omelet you can adapt it to suit your own tastes in veg's. it is quick and easy to do if not a lot of time on your hands. i use olive oil as i fell it gives a nicer taste yum! yum! - 4/28/09

    Wow! Just made and ate this. Was in a rush so did a very rough chop on vegetables. Even with two extra eggs, that was a lot of vegetables! Very good and filling. Lots of potential for changes. - 9/26/13

    I changed it up so much it's not the same and ended up making it as a frittata - yummy. Put in half egg whites and half whole eggs, onions, green-yellow peppers, mushrooms sautéed, kalamata olives and a little cheese. Baked in oven. - 7/6/13

    Sound delicious! And if you don't need four servings, I love leftover omelet for a sandwich filling on whole-grain, high-fiber bread spread with Dijon mustard or your choice of spread, with onion, roasted red pepper (jarred) and tomato--or at room temp accompanied by a green salad. - 4/27/09
