Introduction

Ingredients

    1 cup white flour
    1/2 cup wheat flour
    1/3 cup vanilla protein powder
    2/3 cup Splenda
    1 cup milk
    1/4 cup olive oil
    1/2 cup walnuts
    2 teaspoons baking powder
    1 beaten egg
    2 bananas, mashed

Directions

Peel bananas, mash with fork.

Mix ingredients and pour into muffin tin. Do not use paper muffin cups.

Bake at 400 degrees F for 20 minutes.

Makes 12 muffins.

    These were great! I did substitute real sugar (1/3 C) since I don't do artificial sweetners or splenda. I will make these again. Tasted like banana nut bread. - 6/15/08

    I used choc protein powder because I didn't have any vanilla. They turned out very good. I would even suggest adding cinnamon and nutmeg. Great for a snack! - 6/11/08

    If you can't eat wheat/gluten, use: 7/8 cup brown rice flour, 1/4 cup potato starch, 3/8 cup tapioca flour, 1 Tbsp. flax-seed meal, and 1 tsp. xanthun gum (a binder) to replace the 1 and 1/2 cups wheat flour in this mix. Use rice or soy based protein powder as well. - 6/8/08

    This recipe base hits the spot for me, healthier but not fatfree and dry. I added 1 tsp cinnamon, 1/2 tsp nutmeg and 1/2 banana more as well as some chopped figs for flavour and used "half spoon" sweetener to taste rather than pure splenda. Next time i'll use more banana and even less sugar. - 4/7/13

    This is a great recipe, and I agree about the breakfast item! But I substitute Spelt flour, instead of white or wheat...NO lutens in it...and I sub Agave Nectur (a wonderful NATURAL sweetener) for the sugar, so it's great, healthy, and YUMMY! - 7/10/08

    Just made these but changed the recipe a bit; lessened the milk and oil and substitued applesauce instead; also added some cinnamon and nutmeg. A little bland, needed a pinch of salt, otherwise good - 9/20/10

    Yum! The muffins are nice and moist, and easy to get out of the pan. I had orange-flavored protein powder so that's what I used -- not an obvious orange taste in the muffins, but they're good. I also didn't have wheat flour on hand; used 1.25 cups white and .25 cup wheat bran. It worked out well. - 3/28/10

    I used the following substitutes successfully: King Arthur's Irish whole meal instead of whole wheat flour, soy milk, orange flavor olive oil, banana-flavored Spirutein protein powder, pecans, poppy seeds. Plus cinnamon and fresh nutmeg. 1 Tablespoon of molasses (really good pairing with banana.)

    Several reviews say don't use splenda and then sub raw cane, honey, agave-my suggestion is to try xylitol which is a sugar alcohol and though it does have caloric value, it does NOT spike blood glucose levels as all of the other suggestions (except Splenda) do. I agree splenda is not a safe choice. - 6/11/15

    Bases on other comments, I substituted apple sauce for the oil. I also used a liquid egg substitute similar to Eggbeaters and vanilla soy milk. I also ended up with 16 muffins, once they were portioned out. (I use a spring release ice cream scoop). I really liked the flavor and texture, good! - 1/16/13

    I doubled the recipe and made the following adjustments: 1.5 c. white flour and 1.5 c. whole wheat flour, used chocolate protein powder instead of vanilla and pecans instead of walnuts, and 1/2 c. sugar (instead of 2/3 c.
