Introduction

I've been making this for years. This time I substitued Wheat Penne Pasta for the macaroni. It was delicious! Family loved it! I've been making this for years. This time I substitued Wheat Penne Pasta for the macaroni. It was delicious! Family loved it!
Number of Servings: 10

Ingredients

    1lb. lean hamburger
    1 onion, chopped
    1 clove garlic, chopped
    3 tbsp. chili powder, or to taste
    1 tsp. ground cumin
    2 tbsp. tomato paste
    1 can red kidney beans
    1 cup yellow sweet corn, frozen
    1 tsp. salt
    4 cups of water
    1 pkg. Wheat Penne Pasta

Directions

In a large skillet, brown ground beef with the chopped onion. When the beef is no longer pink and the onion is translucent, clear a small area in the middle of the pan and add the chili poweder, cumin and chopped garlic. Cook these spices for about a minute. Add the tomato paste and mix with the hamburger mixture. Add the red beans, corn and water. Mix and bring to a boil. Add the uncooked pasta. Bring to a boil. Cover, turn heat down to low and simmer for 20 minutes. Makes 10 1 cup servings.

    My husband and I really enjoyed this meal, but it could use a little bit more flavor. I also used yolk free noodles instead of penne also. I would definitely make this again. - 8/14/08
