Ingredients

    1/2 cup of Oatmeal, uncooked
    3 egg whites
    1 medium banana, lightly mashed
    cinnamon (to taste)
    vanilla (to taste)

Directions

Mix together oatmeal, egg whites and banana
Add cinnamon and vanilla to taste (optional)

Spray lage skillet with Cooking spray. Makes 4 pancakes. Cook until browned on each side (about 5 minutes)

So good you dont even need any syrup!!

    This was Yummy! I used Egg beater egg whites instead of regular egg whites & instead of pancakes I made one Belgium waffle in my waffle maker.....delicious! I will try blueberries this weekend instead of the banana.

    Very Good! Be sure to let it set for 5-10 minutes after mixing it up to let the oatmeal soften. Cook on a low-medium heat so it will be done inside and golden brown outside. Next time I'm going to chop apples in it instead of banana for an apple fritter taste. These were great and easy! - 5/1/10

    I used my Nutribullet to grind the oatmeal into a powder, then to mix all ingredients. I added 1/2 tsp baking powder, 1 tsp each cinnamon and vanilla extract. Pancaky, but dense. I think if I made tiny 1-2 inch pancakes they would make a marvelous fingerfood at a party or to give me a healthy snack. - 1/16/15

    Fast and easy. I also added the baking powder and soda and sweetener as others had suggested and the pancakes were light and VERY satisfying. Did not need any butter or syrup. I will be making these again. - 4/6/13

    This is pretty much what I did this morning. I used 2 eggs instead of the egg whites. Works great people! I used 1 tsp of each vanilla extract and cinnamon. Quick oats gets it thick enough, or you might want to up it to a third cup maybe. No blender neccesarry, just used a fork and bowl. - 1/22/13

    This is a great starter recipe for healthy pancakes. I blend the (dry) oatmeal separately in the blender, then blend the remaining ingredients. A pinch each of baking soda, baking powder, and salt lighten the texture. I spice the batter with ginger, nutmeg, and cinnamon, sometimes adding walnuts. - 2/20/12

    Absolutely delicious. I added some fat free syrup to it and blueberries, YUM! So good, the boyfriend loved them too but shh! I won't tell him I got it from my "diet site" hehe. Thanks for the great recipe. :) - 7/20/11

    I absolutely love these pancakes. Just a hint...After you pour the batter onto the griddle use a spoon to spread it out. This makes thinner pancakes that aren't mushy. Plus they cook faster so you can eat them faster. I love to whip these up and take them with me on busy mornings. Yummy & Portable!! - 1/9/09

    Used 6 tabs eggbeaters, and had 1.5 bananas and should have probably increased the oatmeal a bit because of that, or added some flax meal to make more texture/body in waffle. but worked out for a waffle in regular iron, made three of them. I added 1/2 teaspoon baking powder. Taste is good. - 9/19/17

    First time I tried them I wasn't a huge fan, reminded me of an banana omelet. But then I tried putting the oatmeal in a food processor to smooth out the consistency and score! I also use my hand puree to smooth out the batter. That addition helps to give the consistency of a real pancake. - 9/29/10
