Ingredients

    1/2 cup chopped celery
    1 small onion chopped
    1 choppped green sweet pepper
    1 can diced tomatoes
    1 1/2 cups beef or vegatable broth
    2/3 cup long grain rice
    1/2 teaspoon dried basil
    1/2 teaspoon dried thyme
    1/2 teaspoon garlic powder
    1/2 teaspoon ground black pepper
    2 teaspoons bottled to sauce
    2 bay leafs
    1 lb sliced and cooked sausage (lean kielbasa sausage type)

Directions

sweat the celery onion and pepper in margarine (or in drippings from cooking sausage). Stir in tomatoes, broth, uncooked rice, basil, thyme, garlic powder, peper, hot pepper sauce, and bay leaf. Bring to boil. Reduce heat. Cover and simmer for 20 minutes or till rice is tender. Stir in sausage and heat. Discard bay leaf.

For a vegitarian version use vegatable broth and exlude the meat.

    This was really good. I did make a few modifications: I added both 8 ounces of chicken breasts and 1/2 pound of shrimp. I also used water instead of broth to cut the sodium a bit. My husband and I loved it. I have enough left over to take to work for lunch tomorrow! - 1/16/11

    I enjoyed this quite a bit, but I think I would have liked a bit more spice--not heat, but more flavor. I added some jalapenos for a little more flavor (It's just what I had), but overall, this is a great, super easy recipe that took hardly any time at all and was tasty and filling! - 10/6/10

    I used regular Rotel instead of tomatoes. I didn't add any hot sauce because the Rotel was spicy enough for us.

    Excellent and my husband liked it because of it being so spicy, however next time I will put 1 tsp of hot sauce in for me, because I don't like it quite so spicy. Definitely will be made again. - 1/31/08
