These are a wonderful, classic Italian crunchy cookie, that is great for anyone who is gluten- or wheat-free! As these sit, they get crunchy throughout. Delicious with any fruit dessert, paired with an ice cream sundae, or on their own with a strong espresso! Ingredients

2 cups almond meal / flour
1 cup superfine sugar
3 egg whites
1 tsp almond extract
½ tsp vanilla
Directions
Preheat oven to 300F. Line baking sheets with parchment paper (Note: Greasing the sheets instead does NOT work here).
Whisk together the almond meal and sugar.
Beat in the egg whites, almond and vanilla extracts until a smooth dough forms.
Using a teaspoon, drop dough onto baking sheets, about 1” apart.
Bake 25 minutes, then turn off the oven.
Cool the cookies 1 hour in turned off oven, then remove from sheets and store in a dry place.
