Ingredients

    Romaine Lettuce (salad), 3 inner leaves
    Cottage Cheese, 1% Milkfat, .5 cup (not packed)
    Beans, red kidney, 1 cup
    Broccoli, fresh, .5 cup, chopped
    Beets, fresh, .5 cup
    Annie's Naturals Tuscany Italian Dressing, 2 Tbsp, 2 serving

Tips

*Pretend it's a cupcake!


Directions

Wash the lettuce and dry off well. Spoon on cottage cheese, kidney beans, broccoli and drizzle on the dressing. Enjoy!

    Wow - the sodium intake in this recipe for 1 serving is HIGH. I would switch the kidney beans out for Eden brand Black soy beans - that will up the protein and dramatically reduce the carbs and I would make my own dressing. - 10/1/18
