I got this recipe at a WW meeting a few years ago...they use one can of corn. Also, that recipe turned off the cooker 1/2 hr before serving, add an 8oz pkg of fat free cream cheese and allow to soften. Stir it in and serve. I serve with brown rice, and dish the chicken over it. Very Very good. - 10/13/10

I make something similar with this variation:
15 min before serving, remove chicken breasts to a plate and stir in 1 cup of dry Minute Rice.
Replace chicken breasts and sprinkle 1/2 cup of shredded cheddar cheese over chicken.
Cover & cook an additional 15 min until rice absorbs juices. Yummy!

My entire family loves this meal. I added shredded cheddar cheese, a dollop of sour cream and some green onions to the top when serving. My friend added little tostito chips to hers as well. Thanks for sharing! - 2/11/10

This was really good. My husband and I served it over 1 cup cooked rice. Obviously, this increased the total calories but it made an excellent meal under 500 cal. It was light but very filling. I used very hot salsa so it had a spicy kick. We will make this again. - 7/20/10

I used two chicken breasts, substituted pinto beans, and one cup of salsa. I put one can of corn (drained) in before I wanted to serve so it would keep its flavor and nutrients. It was fantastic! Thank you. - 10/26/11

Very simple and good recipe. I made a few changes though. I used frozen corn and 1 can of Rotel tomatoes because I didn't have enough salsa. My husband really liked it. - 9/5/13

Made it yesterday and had it tonight. Everyone loved it including my son who seems to hate everything I cook lately. Next time I will try it with only 1 can of corn though. - 3/7/11

    Bad
This recipe was flavorless, none of the flavors seeped into the chicken. I put in a medium salsa with the black beans and corn. The salsa is very flavorful, and I like it, but none of that flavor transferred to the chicken. I cooked it on high for 3 hours, so maybe it needs more time at the lower se - 2/27/11

I used this recipe as a starting point for using up some left over roast chicken adding in some broth and only cooking for 20 mins in a normal pan. Delicious hot or cold with pasta or in tortillas. - 2/7/11
