Ingredients

    1 box Pilsbury Moist Supreme, Strawberry flavor
    12 oz. Sierra Mist Free
    1 8 oz. tub of Cool Whip Free
    1 1 oz. pkg of Jello SF/FF Instant Pudding Mix

Directions

Pre heat oven to 350.

In medium bowl, add cake mix and soda. Wisk for 2 minutes.

Place mixture into 24 cupcake liners @ 2/3 full. Bake for 18-22 minutes.

While baking mix the pudding into the cool whip and refrigerate for at least an hour.

Once cupcakes have completely cooled you can spread approx 1 tbsp. of icing onto each cupcake, or ice individually.

Refrigerate if icing all cupcakes at once.

Variations/Notes: you can change the cake mix to any flavor you like, however the calories/fat have been calculated for items listed only. If using a dark cake mix, I would recommend using a dark diet cola. You can also change the pudding mix flavor to match your choice of cake. Cupcakes freeze well.

    I made these for work, everyone loved them, a few of the guys said they were the best cupcakes ever, and all were amazed when I gave them the recipe. I will make many more batches for a special snack!! - 7/25/09

    Used strawberry cake mix with diet cream soda. They tasted great and were incredibly moist! The only problem I had was that the cupcakes stuck to the paper liners. Will use this recipe again but will use non-stick spray on liners or spray non-stick muffin pan without paper liners. - 3/25/11

    These were really moist and so easy to make. It was my first time making any of the "soda" recipes. We used Sprite Zero and for the frosting we used the SF/FF White Chocolate Pudding mix and FF Cool Whip. My husband and I both thought the frosting tasted like marshmallow creme! - 8/28/08

    I made these for my mom's birthday party. Kids, women, and men all liked them. I was told they taste like jello cake, but I loved that they were so cheap and quick and simple! I left off the frosting for some (so that it would be non-dairy) and it was good that way too. - 7/22/12

    Very Easy ooey gooey moist and light cupcake (yummy) I made a cream cheese frosting and strawberry sauce to drizzle on top of them warmed my cupcake up in the microwave for a few seconds applied a small spoon of cream cheese icing then drizzled it with the strawberry sauce (amazing/guilt free) Thx! - 7/19/12

    Very yummy and everyone loved them! I used the white chocolate pudding mix like others suggested and it was great. I only got 18 cupcakes, but I think I filled them too full. Overall, they were excellent - even my "chocolate only" husband liked them! - 4/10/11

    I just made these tonight and I'm HOOKED! I had no idea how the diet soda would work but it did! I was absolutely amazed at how incredibly moist the cake was. For the icing, I used SF/FF Jello Vanilla pudding and folded in FF Redi-Whip and it was A-MA-ZING! Delicious! - 3/25/11
