Introduction

Ingredients

    1-1/2 cup water
    2 cups peeled cubed potatoes
    2 carrots, grated
    1 small onion chopped
    1/2 cup green pepper, chopped
    1 jalapeno, seeded & minced
    1 garlic clove, minced
    1/2 tsp salt
    2 cubes beef boullion, crumbled
    1 lb lean ground beef
    2-1/2 cups fat free milk, divided
    3 tbsp flour
    1/2 lb 2% milkfat American cheese, cubed
    1/4 tsp cayenne pepper(optional)

Directions

In a large saucepan over medium heat, combine water, potatoes, carrots, onion, bell pepper, jalapeno, and garlic. Sprinkle with salt and bouillon.
Bring to a boil and reduce heat, cover and simmer for 15 to 20 minutes until potatoes are tender.
Meanwhile, in a large skillet, cook beef; drain.
Stir cooked beef and milk into potato mixture and heat through.
Combine remaining milk with flour.
Stir until smooth. Stir into soup.
Bring to a low boil and cook stirring until thickened. Reduce heat to low. Stir in cheese until melted. Season with cayenne pepper.

    I substituted beef broth for the water and boullion cubes, you can get salt free and fat free and it cuts the sodium of this recipe or you can not add the salt if I was using the bouillion, they have enough salt as it is. But it was a tasty dish for and we had it with a large green salad - 9/24/11

    Why ruin a good stew with peppers? Ok, that is just my opinion 'cause I am allergic. Really, this stew sounds great once I get past those.... lol

    Very Good
    I thought it was really good. My daughter had a nasty attitude about the name of it, but when she ate it, she went for seconds.

    Very Good
    MY family enjoyed this recipe. It is very different from the same ole same ole of everyday cooking. I used red bell peppers instead of green and I will use turkey next time. It is a very hearty and thick soup. Thanks! - 7/9/07

    After cooking and draining the beef, rinse it with water to get off even more fat. I do this every time I cook beef this way (sloppy joes, chili, etc.). - 9/25/11

    Optional preparation: brown beef in soup pot (adds flavour), remove, drain. Cook soup in same pot without meat or cheese. Blend if planning to freeze. Add meat. Can freeze at this point. Heat, sprinkle shredded cheese on top. Serve. - 7/18/11
