Introduction

A delicious chicken recipe that is a winner at my house! A delicious chicken recipe that is a winner at my house!
Number of Servings: 8

Ingredients

8 four- ounce skinless, boneless chicken breast: cut into 1- inch cubes
    1/4 cup canola oil
1/3 cup low sodium soy sauce
    1/3 cup honey
    2 cloves garlic, minced
    1/4 tespoon black pepper
5 small onions, cut into 2-inch pieces
2 red bell peppers, cut into 2 -inch pieces

Directions

1. Whisk together oil, honey, soy sauce, pepper, and garlic. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Add chicken , onions, and peppers and marinate for 2 or more hours (the longer the better).

2. Soak 10 - 12 wooden skewers for 30 minutes or more. Drain chicken mix and divide chicken and vegetables evenly among skewers.

3. Cook the skewers on the grill, turning and brushing with reserved marinade for about 12 - 15 minutes or until the chicken is fully cooked (this can also be done in the broiler).

Makes 8 servings

Note: You can try a variety of vegetables. Some of my family's favorites are mushrooms, yellow squah, and zucchini.

This one is a staple at my house. If there is fresh pineapple, I grill it on skewers with various veggies (on separate skewers from the meat.) - 5/25/10
