Ingredients

    1/2 head cauliflower (6-7" diameter)
    1 cup reduced-fat shredded Cheddar cheese
    1 Tbsp chopped chives
    1/2 tsp black pepper
    1 Tbsp salted butter
    1/4 cup plain low-fat yogurt
    2 Tbsp bacon bits
    1 tsp minced garlic
    1/4 cup reduced-fat sour cream


Tips

* Squeeze moisture out of cauliflower with a kitchen towel or cheese cloth so that it's more the consistency of potatoes before mixing.

** Mix a little olive oil and grated Parmesan cheese. Spread on top and broil until golden brown


Directions

1. Cook cauliflower until tender (Microwave and cover with NO water added for approximately 6 minutes on high).
2. Preheat oven to 400F.
3. *Process cauliflower until smooth with a food processor. Add yogurt, sour cream, and butter and process until creamy and smooth.
4. Mix remaining ingredients together in a medium bowl.
5. Use cooking spray on 4 seven-ounce ramekins or other small oven-safe dishes and spoon mixture into dishes.
6. Place all small dishes on a cookie sheet for easier handling.
7. Bake for 15 minutes on middle rack and then **broil for a few minutes until top is golden brown.
8. Makes 4 servings

    The calorie count is off on this recipe - nutrition is based on one-half Cup cauliflower for entire recipe, rather than one-half a cauliflower. Needs to be re-worked. - 11/13/14

    I know it's all the rage to use low-fat yogurt, low-fat cheese, and low-fat sour cream. What about all the sodium in this recipe? My meal-tracking shows that I don't get enough fat or protein, but I get an over-abundance of sodium and preservatives. wth? - 11/24/14

    sounds like a great recipe, however reduced fat and low fat and no fat are not "primal". limit your dairy but if you're going to use it use the real thing! Full fat traditional greek yogurt is delicious. - 12/12/14

    Coarsely mashing 1/2 or all of the cauli gives this some much needed texture. I'm at a bit of a loss to see how this adds up to all this protein.....unless totally dependent on the cheese for protein...

    I used the entire head of cauliflower and mashed half like the recipe stated, so I could have some "chunks" and added a small head of broccoli to it too. Doubled the yogurt instead of adding sour cream. I used nonfat plain Greek. I also saved some cheese to sprinkle on top before I baked it. YUM! - 11/23/14

    I have made a cauliflower cheese bake for years. I used it to sub for mac and cheese. This sounds equally delicious. It is now in my recipe book and will definitely be fixed for dinner very soon, - 6/29/14
