Introduction

The perfect way to serve leftover chili. The perfect way to serve leftover chili.
Number of Servings: 8

Ingredients

12 ounces frozen shoestring French fries*
    2 cups chili
1/2 cup shredded reduced-fat sharp cheddar cheese
1/4 cup yellow onion, diced fine

    * We like sweet potato fries!

Tips

We used Chili Con Carne in this recipe, but you can choose your favorite recipe.

Directions

Preheat the oven to 450 degrees Fahrenheit.
Spread the fries on a baking sheet in a single layer and bake for 8 minutes.
Meanwhile, reheat the chili on the stovetop or in the microwave.
Remove the fries from the oven and reduce the oven temperature to 300 degrees.
Divide the fries into four oven-safe dishes. Top each portion with 1/2 cup chili and 2 tablespoons cheese, then bake until the cheese has melted, about 2 minutes.
Remove from the oven and sprinkle each portion with one tablespoon onions.
Caution: dishes will be hot!
Serving Size: Makes 8 servings as a snack, 4 as a meal

Much better to make fresh organic sweet potato fries! So easy: just scrub then slice the potato in the shape of fries. Toss with extra virgin olive oil and put in oven at 375 for 25 minutes! - 4/29/13

Very good, but if you're like me, the fries need to be really crispy...I ended up baking them a little longer, for that reason. Def. satisfied my urge for gooey, cheesey fries...without the extra serving of guilt! - 4/16/13

If you replace the chili with beans and cheese with salsa, it isn't chili cheese fries anymore. - 1/29/14

Regarding the question about sodium: I would use leftover homemade chili. I make it pretty low-sodium. I'm going to try this next time I have leftover chili. Sounds great, especially with sweet-potato fries, and serve with a mixed-green salad. - 4/29/13

I like my fries crispier, so I let them bake a little longer. I also make my own chili to control as much sodium as I can and when possible, try to find the low-fat, lower sodium cheeses. - 1/29/14

Use a low-fat turkey or beans only chili to reduce calories. Top with salsa to heat it up (mango salsa was awesome). - 12/4/13

If you really feel the need to indulge, but don't like spicy stuff - this is also a great way to use up the last few spoonfuls of that lovely gravy that's left-over after dinner and usually just has to be thrown out!
Chips, cheese and gravy - mmmmm!
