Ingredients

    1 bunch broccoli, stems peeled and chopped into bite-size pieces, and heads broken into florets
    2 lemons, zested then cut into wedges
    1 tablespoon olive oil
    1 teaspoon black pepper
    2 cups prepared brown rice

Tips

Not a fan of broccoli? Try cauliflower, asparagus or Brussels sprouts.


Directions

Preheat the oven to 375 degrees Fahrenheit.
Place the broccoli on a baking sheet lined with parchment. Sprinkle on the lemon zest, olive oil and black pepper, then scatter the lemon wedges on the baking sheet.
Bake for 20 minutes, stirring halfway, until the broccoli is tender and starting to brown.
While the broccoli and lemons are cooking, reheat the brown rice.
Remove the veggies from the oven and transfer the broccoli to a large bowl. Add the rice, then squeeze the lemon wedges over the broccoli and rice, then discard. Toss gently, then serve.

About 1 1/2 cups per portion.

    Even though this shows I've given a four star rating, I really gave it five stars. My IPad wouldn't let me change it. This recipe is not only easy to make, but it's delicious! I also sprinkled a little fresh grated Parmesan cheese on it for an added touch. - 2/8/13

    Love all of these ingredients! Can't wait to try the recipe. I know this is a sponsored recipe, but I'll be using my favorite brown jasmine rice instead and so it'll take me longer to prepare. My choice and all is good. Making it with quinoa also sounds like a good idea! - 2/8/13

    I have been steaming broccoli all week! I didn't even think of roasting it! I'm so used to eating things raw or steamed! I did use quinoa instead of brown rice, but still, it was such an awesome healthy lunch idea! Will definitely use again! :) - 12/6/14

    I have made this with both broccoli and cauliflower. I just use the fresh veggies I have and this is easy and delicious-onions, potatoes and my favorite Brussel sprouts. You wont get bored with all of the variety. I usually dont make my veggies any other way. - 2/20/14
