Ingredients

    4 chicken breasts, skinless boneless, thawed
    1/3c. feta
    1 med. orange
    2T dried sweetened cranberries or raisins
    1/3c. bread crumbs
    1/2t basil, dried
    2T grated parmesan

Directions

Load feta into food processor. Use the grater to zest the outermost layer of the orange into the food processor. Cut the orange in half and squeeze all of the juice of JUST ONE HALF into the food processor. Add your dried fruit. Cap it and pulse until smooth.

Using a small pointed knife, create a pouch in each chicken breast. You may enter at the thickest, roundest point and open the inside, or simply slit straight down one side. Spoon the feta mixture into each chicken.

Combine bread crumbs, basil, and parmesan. Coat each chicken breast. (I bake two, freeze two.)

Bake at 350F for 40min.

    Very Good
    I added 1/2 bag of baby spinach to the cheese mixture. Also next time I will pound the chicken thin, stuff with cheese mixture and roll up then secure with a toothpick. Creating the pocket was time consuming for me. VERY GOOD and make the house smell wonderful. - 6/7/08
