Introduction

Ingredients

    1 lb. fresh pork roast - Cubed

    1 can Ro-Tel Diced Tomatoes and Chile Peppers

    1/2 cup Roasted green Chile can be mild, Medium or Hot.

    6 Medium Potatoes diced 2 inch squares. with or without skin

    1/2 Tsp Garlic
    (You May reduce Garlic to up to 1/3 tsp)

    Salt to taste aprox 1 tsp

    1/3 cup Onions (optional)
    onion salt or powder can also be subtituted.

    Water

Directions

Combine all ingrediance in a crock pot
Fill Crock Pot to an inch from the top with water.

cook for 6 hours.

    This was a really tasty recipe. My husband doesn't normally eat healthy, but my entire family enjoyed this recipe. I'm a big fan of crock pot recipes as well and I will absolutely make this recipe again. - 2/19/08

    This recipe was great! I was a little afraid that my stew wouldn't look like what the picture show, and it did end up not looking like not the picture. So I added chicken boullion after it had finished slow cooking. Mixed it in, and it got that stewy yellow look, and tasted as good and better! - 6/18/11

    This was soooo good. We can't get Rotel where I live so just used diced tomatoes. I also cooked it on top of the stove since I got started late in the day. Served with whole wheat cornbread. Such a filling, tasty and nutritional meal. Thanks for the recipe. :) - 3/3/10
