I added black beans and used low sodium chicken broth instead of water. Next time I may use brown rice instead of potatoes. Delicious!
This was soooo good. We can't get Rotel where I live so just used diced tomatoes. I also cooked it on top of the stove since I got started late in the day. Served with whole wheat cornbread. Such a filling, tasty and nutritional meal. Thanks for the recipe. :)
Mine came out perfect and delicious. YUM! I used chicken broth instead of water, and Tony Chachere's Original Creole Seasoning instead of salt.
