Introduction

A low-fat take on a New Orleans favorite. A low-fat take on a New Orleans favorite.
Number of Servings: 4

Ingredients

    4 - 4 oz B/S chicken breasts
4 wedges Laughing Cow Cheese (any flavor)
    4 servings extra lean ham
    1/2 package Shake 'N Bake

Directions

1. Pound each to about 1/4 inch thickness.
2. Spread one wedge of cheese on top of each breast (last night I used the garlic & herb). Then put on 2 to 3 slices ham. Roll up the chicken and secure with toothpicks.
3. Place on a baking tray and sprinkle with Shake 'N Bake. Bake at 400 for about 35 to 40 minutes.

We lowered the sodium by making our own "shake 'n bake" with panko bread crumbs and herbs and spices. Excellent and very easy. - 3/14/09

Amazing!! I have it bad for this food & I've had to give it up b/c it's so bad - this is SUCH an awesome idea! I couldn't find my tenderizer - so I just "butterflied" the breasts - smeared the cheese & layed the ham. Folded the chicken & sprinkled the breadcrumbs. Quick, Easy & Delish! THANK YOU!! - 2/25/09

This was REALLY good, and easy. My hubby wants me to add it to my favorites, he loved it so much. I used a piece of turkey bacon instead of the ham though and it was a nice alternative. - 1/12/09

I always enjoyed this dish however when I stopped eating pork products it had to go. I've since revised the recipe: boneless thighs, turkey ham and spicy bread crumbs. I'd never used Laughing Cow cheese to make this dish and was quite pleased with the results. - 5/17/19

Don't like Shake'n'Bake. Used Panko Bread crumbs which I seasoned myself (just use whatever spices you like -- italian seasoning, garlic/onion powder, a little dried parsley for color). - 5/7/17
