An easy, yummy, filling meal! An easy, yummy, filling meal!
Number of Servings: 2

Ingredients

    1 chicken breast
    1-2 tbsp fat-free sour cream
    3/4 cup chopped mushrooms
    3/4 cup chopped tomatoes
    1/2 cup chopped onions
    2/3 cup low fat shredded cheddar (or your favorite low-fat cheese)
    1/2 cup chopped green bell peppers
    1/2 cup chopped sweet (red) bell peppers
    1/3 cup salsa
    2 large whole wheat tortillas

Directions

Bake the chicken breast at 375 degrees for approximately 40 minutes or until done throughout. Chop into small strips or chunks.

Spread out tortilla shell and spread with sour cream. Pile chicken and toppings all over the tortilla, putting cheese and salsa on the top. Top with another tortilla. Place in the oven for approximately 5-10 minutes at 300 degrees, or until tortilla is browned slightly and cheese is melted.

Cut in half and serve!
