Ingredients

    1 bag Miracle Noodle Ziti
    1 pinch of salt
    1/8 cup almond milk
    1/8 cup low-fat cottage cheese
    3 tablespoons low-fat cheddar cheese
    1/4 tsp dry mustard
    pepper to taste
    pinch of cayenne

Directions

1. Drain noodles, rinse in cold water, pat dry and place in a bowl
2. Add the rest of the ingredients to the bowl and mix
3. Microwave for 2 minutes and serve

    These "noodles" are called indigestible for a reason. Please don't anybody use these. Who the heck knows what that is really doing to your body. Just eat real food, indulge in something like mac'n'cheese occasionally. But don't eat something this fake just because it has very few calories. - 7/16/14

    I still haven't found a mac n' cheese recipe that fills that void for me. This recipe isn't it either. I think I am sticking to the homemade stuff that may not be that good for me, but I use it as a very rare treat and REALLY get to enjoy it. - 1/16/14

    I much prefer making my own - use whole wheat pasta, and send some reduced fat cheeses (a blend of types tastes better) through the food processor to powder-ize it so it melts nicely. That plus a quick reux from whole wheat flour and milk is very satisfying. - 2/20/14

    Miracle Noodles are a little bit of an acquired taste, but to everyone saying boo to them you really need to try them! I always boil mine for at least 10 min to get rid of the slightly fishy odor. Mix them with a sauce like this one and mmmm oh so good! - 2/20/14

    I was excited when I read skinny, to my dismay once I read the ingredients it made me unhappy. Some things are just worth the extra fat, I need whole fat cream and cheese for my mac and cheese sorry the only exception I will make is using barilla whole grain pasta. fishy noodle, almond milk no. - 3/27/14

    I have not tried this and won`t try it....Those noodles look icky! and almond milk, even plain unsweetened, does not work well in savory dishes,also cottage cheese does not melt like it showed in video! - 3/13/14

    I am going to try this because of the carb count. But one hint for the noodles is to drain them, rinse them well, then put them in boiling water for one minute, drain and then dry them in a non stick frying pan. No fishy taste or smell. I like them and the health benefits make them even tastier. - 8/22/14

    I don't recommend using these "miracle noodles" because they are nothing like real pasta and are actually indigestible as they are made from こんにゃく. A better way to prepare this recipe is use a natural healthier low carb pasta option like quinoa or chickpea pasta. - 11/7/16

    You have to dry these noodles. My recipe tastes just like the old southern way I've done them for over 40 years. I must say, this recipe needs a lot of work. This wouldn't be good, even if you used regular noodles. Go southern!!! And don't forget the butter & heavy cream. Low Carb!!! - 1/26/15

    for those saying this isn't "real" food...they are made from a vegetable similar to a yam, they are natural. and they don't taste bad. they do smell bad when you first open bag before you rinse them. and they are hard to find where I live - 1/25/20

    for how it comes out as a substitute not bad. Can't think of it as the real thing. I like the noodles -the key is to rinse them for several minutes before cooking them. I like the way they can mimic noodles. I used laughing cow smoked gouda wedge/ microwaved and a bit of mustard. - 8/11/18
