Ingredients

1 Tbsp white miso paste
.5 tsp dashi granules (omit if avoiding fish)
1/2 ounce angel hair pasta, uncooked
1.5 ounces shredded zucchini or summer squash
1/4 cup mixed frozen vegetables
a few leaves of fresh spinach, lettuce, or other greens
green onion/scallion, snipped, to taste
Tips
Don't add salt to the pasta water; miso paste is quite salty as it is.
Directions
Measure miso and dashi granules into serving bowl, and add the spinach greens after tearing them into small pieces. Add the snipped green onion or scallion if desired. Boil the angel hair pasta, the frozen vegetables, and the shredded zucchini together for 5 minutes or until the pasta is done to your liking. Add pasta, vegetables to serving bowl, along with boiling water to fill. Stir to blend in miso paste and let stand for 2 minutes; the boiling water will cook the spinach or lettuce leaves.
