Ingredients

    2 15 oz. cans black beans, drained, rinsed
    1 1/2 cups vegetable broth
    1 cup chunky salsa
    1 tsp. ground cumin
    4 tbsp. sour cream
    2 tbsp. scallions, chopped

Directions

In food processor or blender, combine beans, broth, salsa, and cumin. Blend until fairly smooth. Heat mixture over medium until thoroughly heated. Ladle into 4 individual bowls, and top each with 1 tbsp. sour cream and 1/2 tbsp. chopped scallion

    This is an awesome healthy soup... same recipe from allrecipes.com (great site for recipes- you can look for only low-carb/low fat recipes) I like to let this soup simmer for awhile to really let it thicken up... tastes even heartier! - 5/22/08
