Introduction

Number of Servings: 24

Ingredients

    4 eggs
    1 cup sugar
    2 1/4 cups whole-wheat flour
    3/4 cup vegetable oil
    1 cup vanilla soy milk
    2 tsp vanilla extract
    2 1/4 tsp baking powder
    1/2 tsp salt

    1 package vanilla frosting
    green food coloring
    72 candy-coated mini chocolate eggs

Directions

Preheat oven to 350 F.

Mix eggs & sugar until thick, about 1 minute (no longer). Add remaining ingredients, mixing until smooth.

Bake in lined cupcake pans for 20-30 minutes, or until a toothpick inserted in the middle of a cupcake comes out clean.

While the cupcakes are baking, tint the frosting with green food coloring and transfer to a pastry bag with a small tip.

Once the cupcakes have cooled, pipe "grass" onto each one, then top with three mini candy-coated chocolate eggs.

Makes 24 cupcakes, 1 per serving

    Surprise, a cake recipe that doesn't start out "take a box of cake mix". Everything was easy except the frosting grass. Had some trouble with that. - 4/6/17
