Ingredients

    2-1/2c flour
    1 tsp baking soda
    2 tsp baking powder
    1 lg pinch salt
    1 c.sugar
    1/3c. canola oil
    1 egg
    12 oz. lowfat blueberry yogurt
    1-1/2 cups fresh blueberries

Directions

In a large bowl sift dry ingredients except sugar
in another bowl blend sugar, oil, egg and yogurt
add dry ingredients and blend. Add blueberries and blend gently.
Line 18 muffin tins and use an ice cream scoop to fill. This recipe is divided by 19 servings so you can lick the bowl!! Sprinkle a little sugar on top of each. Bake at 375 for 20-25 minutes.

    Ok this is great!! I work in a kitchen and you should try this out, make the batter with a part of the yogurt not all. and with blueberries. then put a bit in the muffin incert, then a teaspoon of yogurt place in the middle of batter, then put some batter on top. cook em and eat em. try em if u want - 4/28/08

    I made these but used non-fat sour cream in place of the yoghurt. I think you could use buttermilk as well. They were tangy and not too sweet. Very thick batter, however. I think I probably overfilled the cups - they kind of spread over the tops. - 11/3/09

    I made these with non-fat vanilla yogourt - they came out good, but the batter was REALLY thick. Next time I'd add a bit more sugar/Splenda because they weren't as sweet as I like my muffins normally. They were really easy to make and I made 24 smaller muffins that are about 118 calories each! - 6/20/08

    They really do taste great...very light and fluffy...we varied the recipe a little though. We put Raspberries, blackberries and banana and strawberry yogurt to be controversial!! ...the mix of flavors worked great...also because Im fat I doubled the recipe... - 6/13/08
