Ingredients

    5 medium potatos chopped
    1 shallots chopped
    4 leeks chopped (ends only rinsed)
    8 cups vegetable broth
    4 cloves garlic chopped
    black pepper
    salt
    pinch of cayan
    bbq seasoning

Directions

Saute garlic, shallot and leaks until soft in none stick skillet with small amount of olive oil add in all seasonings. Add diced potatoes and saute for 2 minutes. Pour in broth cover and simmer until potatoes are soft. Remove 2 cups of mixture and blend until smooth. Pour blended mixture into soup stir and serve.
Excellent with a small amount of cheddar cheese on top

    It was very good fairly quick soup. I used chicken base instead of vegetable broth and it worked out fine. - 7/30/11

    Incredible!
    This is fantastic. I didn't have BBQ seasoning so I used Essence. I used more than a pinch of cayenne since I like it spicy. Instead of removing half at the end, I just ran the stick blender through. For anyone anal about measuring, I used 1lb 10.5 ounces of potatoes and it was great! Thanks! - 8/14/11
