Introduction

This July 4th treat is fun, festive, and full of summer fruit. This July 4th treat is fun, festive, and full of summer fruit.
Number of Servings: 8

Ingredients

    1 pie crust
    1 block soft tofu
    1/2 cup vanilla soy milk
    1 package vanilla Jell-O instant pudding
    1/4 cup strawberries
    1/4 cup raspberries
    1/4 cup blueberries

Directions

Bake pie crust.

In a blender, combine the cold soy milk, tofu, and pudding mix. Chill until the pie crust is cooked and cooled.

Pour the pudding mix into the cooled crust.

Arrange the fruit in a fun pattern on top.

Set in refrigerator to chill until ready to serve.

    If you're not used to making tofu dishes, this is an easy way to start. Use Mori-Nu silken tofu for dishes like this pie or puddings. Just blend your favorite flavors - vanilla, chocolate, whatever. It's SOOO easy.

    Problem with Cool-whip is it is full of trans-fats... experiment with different types of tofu or maybe use almond milk instead of soy milk, or even fat-free high protein regular milk... - 8/29/08

    fyi - using skim milk and sugar free pudding there are 60 cals / serving, 2.2g fat, 6.4g carbs, 1.9g sugar, 4.4g protein. Using skim milk and regular pudding, 91.2 cals, 2.2 fat, 14.8 carbs, 11.4 sugar, 4.4 protein. Hope this helps someone! - 6/30/11

    Be careful with soy anything. I am allergic to soy, even if its soybean oil I break out in a rash, so if you never had it before try eating it mixed with a salad, first. Japan has a high allergy rate to the stuff its not uncommon. - 10/10/09

    tofu takes on the taste of anything you put it with....its virtually taste free....i love soy milk....yes some may have to acquire the taste....

    I use Tru-Whip instead of Cool Whip for recipes that call for whip. It is made with real food instead of chemicals. It comes in regular or light. But, I would rather be putting in real foods instead of chemicals into my body. - 5/25/14

    I don't get it. SF pudding with Cool Whip?? Why waste berries on this chemical concoction? Cool Whip is mostly sweetened chemicals and trans fats!     I know everyone thinks soy is healthy, it is actually not! Many are allergic to soy and most of it is genetically modified. It also contributes to thyroid dysfunction and many more problems. The only good soy is fermented...do a search, get the facts yourself. - 6/30/13
