Ingredients

    1 med. size eggplant-peeled and cubed
    1 large can(28oz) diced tomatoes
    2 tsp chopped garlic
    2 tsp Italian Herb seasonings mix
    2 Tbsp grated parmesan cheese
    1/2 cup of shredded Italian Cheeses
    onions (optional)
    salt and pepper to taste

Directions

Combine garlic, onion and Italian seasoning in a skillet with a little water and saute until the garlic and onion is tender. Add the peeled and cubed eggplant and saute a little longer until eggplant is tender. Then stir in salt, pepper and diced tomatoes until heated through. Place ingredients into a baking dish. Mix in the parmesan cheese. Sprinkle the reduced cheese blend on top and bake at 350 for about 15 min (until the cheese is melted). Severs about 4-1 cup servings. Allow to cool a few minutes before serving. For a main entree, you can add ground beef. It also tastes good on pasta. I'm sure there are many ways to vary this dish.

    This was very good!! I didn't peel my eggplant...too much work and it tasted just as good I thought! Next time I will use crushed tomatoes instead of diced. And I also used mild cheddar (had to use it up) and swiss for the cheeses. Still yummy!! Will make this again! Thanks for sharing! - 11/15/10

    This was really good! I think I need to cook it a bit more and adding some turkey bacon would add some great protein and texture for those who are not vegetarians. - 9/4/08

    My husband and dad loved this. Me, not being an eggplant person, also was able to enjoy it. We added wheat angel hair pasta, ground turkey and some extra tomato sauce on the side for the kids. Everyone had second helpings... problem is that it's easy to overeat! - 8/5/08

    My finicky 6 year old DS loved this and asked for 2nds!!!! That just doesn't happen!!!! I did double the Parmesian and added salami on top as I was hoping to make this kid friendly and I served it as the main course. He actually ate a vegetable without arguing!
