Introduction

Ingredients

    • 1 lb. lean beef (top round)
    • 3 teaspoon vegetable oil
    • 3/4 tablespoon finely chopped onion
    • 1 lb. sliced mushrooms
    • 1/4 teaspoon salt
    • to taste pepper
    • 1/4 teaspoon nutmeg
    • 1/2 teaspoon dried basil
    • 1/4 cup white wine
    • 1 cup plain low-fat yogurt
    • 6 cup cooked macaroni, cooked in unsalted water

Directions

1. Cut beef into 1-inch cubes. Heat 1 teaspoon oil in a non-stick skillet. Sauté onion for 2 minutes.

2. Add beef and saute for additional 5 minutes. Turn to brown evenly. Remove from pan and keep hot.

3. Add remaining oil to pan; saute mushrooms.

4. Add beef and onions to pan with seasonings.

5. Add wine, yogurt; gently stir in. Heat, but do not boil.

6. Serve with macaroni.

Yield: 5 servings--Serving Size: 6 oz

    eliminated the meat, used soy curls instead, used the Greek fat free yogurt in place of sour cream, onion lover as I I used a quarter cup, used Bragg's amino and low sodium beef broth. Big BIG difference in fat and calories, as well as sodium. - 5/12/09

    Using Greek-style yougurt would help cut down on the "wateriness"....you can also take low/no fat yogurt and drain it overnight. This gives you about the same effect as the Greek yogurt. Do not let it boil after adding the yogurt! - 5/12/09

    I made this and left out the nutmeg and wine and also used very lean round steak. It was great. I also used whole wheat pasta. The whole family loved it. Thanks for a good suggestion. Will use this recipe a lot. - 5/12/09

    This is delicious. I used the greek yogurt which is fat free and adds more protein to the dish. Word of caution though. If greek yogurt boils it curdles and will break your sauce. Make sure you remove the pan from the stove before adding the yogurt. This will be one of my new company favorites. - 5/15/09

    My family liked this more than me. I thought it need some sort of tomato sauce mixture, as I thought the taste was very very bland. It also needed some sort of Parmesan cheese mixture. My husband thinks Stroganoff just isn't the same without the sour cream. - 4/20/09

    I made this for Sunday dinner. I used whole grain penne pasta. The only change I would make next time is using a little less nutmeg. It was a little overpowering. It also tasted much better hours later. - 2/15/09

    Instead of plain fat free yogurt, I used Greek fat free yogurt---Fage Total 0 percent---and didn't miss the sour cream I used to use at ALL! - 5/12/08

    I made it with the steak it called for & the steak was very, very tough. I did make one change, I replace dthe wine with low sodium beef broth but I don't think that is why it was so tough.
    Now I see some of you are using groud round for it and I think I will try it that way. The sauce was delish.

    Made with lean ground beef (kid friendly for my son) and used the greek yogurt based on other comments. Was a little to thin/runny for my family. Taste was okay - will use a mix of yogurt and low sodium cream of mushroom soup next time. - 4/13/10

    I am a Stroganoff snob...So I am really curious to see if lowfat yogurt can really substitute for sour cream...but I would LOVE to find a way to cut some of the calories without sacrificing taste...I will give this a try! - 5/12/09

    Ok, I'm for everything... but the beef and pork. What about chicken? I think that will be what I'll try. It sounds good. I may also replace the macaroni with brown rice as well. - 11/8/07
