Introduction

Pork chops with a fruity kick! Pork chops with a fruity kick!

Ingredients

    • 1/2 cup chopped onion
    • 1/2 cup dried figs, chopped
    • 1/2 cup chicken broth
    • 1/4 cup orange juice
    • 1 tablespoon sugar
    • 2 teaspoons paprika
    • 1 teaspoon peeled and grated fresh ginger
    • 1 3" cinnamon stick
    • 1 1/2 cups seedless red grapes, halved
    • 4 medium sized pork chops
    • 2 teaspoons olive oil
    • salt and pepper to taste

Directions

1. Prepare grill.



2. In a medium saucepan, combine onion, figs, chicken broth, orange juice, sugar, paprika, ginger and cinnamon stick and heat to medium-high heat. Bring to a boil and cook, uncovered, for 8-10 minutes. Stir in grapes and reduce heat and simmer for 20 minutes then remove and discard cinnamon stick.



3. Brush pork chops with olive oil then sprinkle with salt and pepper. Grill on both sides until done.



4. Serve chops with grape and fig chutney.



Serves 8.

    wow---everyone keeps asking how can it serve 8 folks with only 4 chops...i think the answer here on spark people is more than easy enough to imagine....CUT DOWN ON YOUR PORTION SIZE?????? No? Each person can have half a pork chop and be satisfied. - 6/14/10

    Very Good
    I love unique sauces so this chutney was a treat. I think it would go well with chicken and since we had some left over, I will try that tomorrow. - 7/20/08

    I just like the idea of the chutney itself. Maybe use Splenda instead of sugar and serve it on chicken. The chicken could be done in any way. It is the topping that is the interest. - 6/4/08

    I agree!!! How can it serve 8 with only 4 chops. That means that a serving is 1/2 a chop, and is still 300 calories. I don't think I will make this one, unless there is a huge mistake in the recipe!!!! - 6/4/08
