Introduction

Fluffy, Moist Muffins Fluffy, Moist Muffins
Number of Servings: 10

Ingredients

    1 Cup Quick Oats
    1 Cup Milk Fat Free
    1 egg
    1/4 Cup Oil
    1 Cup Flour
    1/3 Cup Sugar
    1 Tbls. Baking Powder
    1/2 teaspoon salt

Directions

Preheat oven to 425 degrees.

Mix Oats and Milk, let stand 15 minutes. After mixture has rested add egg and oil, beat until well mixed. Add remainder of ingredients and mix well.

Bake for 20-25 Minutes

May add cinnimon, or pie spice to add variety.

    These were ok. They are not that sweet. I made two pans. One with raisins and one without. The pan without raisins taste like cornbread. I will make these again however I will add a little more sugar.

    Very Yummy!! I added raisins, next time will add raisins, walnuts, and maybe some flax or wheat germ. Also, I used whole wheat pastry flour. It is a very good recipe for a base or just as they are. - 10/16/10

    LOVE this recipe. Very versatile. I'm already thinking of adding cocoa and chocolate chips for a midday snack, or craisins and walnuts for a heartier breakfast. I bet it would be good to substitute a flavored quaker instant oatmeal packet or two for the oats for something different as well. - 7/28/08

    Man, the kids WOLFED these down! I liked the simplicity of the recipe, the low fat goodness, and those "good" carbs from rolled oats. I added 1/4 cup of chocolate chips...just enough for each muffin to have 3 or 4 chips. ;o) - 3/13/07
