Ingredients

1 chilled cucumber
1 avocado
2 scallions, chopped
1/4 cup mint leaves, chopped (can be left out)
1/2 cup well-shaken low-fat buttermilk
1 1/2 cups cold water
salt and pepper to taste
Directions
1) Cut cucumber into 3 equal pieces, then coarsely chop 2 of the cucumber pieces. Coarsely chop half of the avocado.
2) Blend together the chopped cucumber and avocado and the mint leaves, scallions, buttermilk, and water until smooth. Taste and season with salt and pepper as needed.
3) Chill soup, uncovered, 15 minutes.
4) Cut remaining cucumber and avocado in 1/4 inch pieces and stir into soup.

I was not sure about the mint leaves but it added to the flavors...I too added more buttermilk and less water...I also added fat free cream cheese for a cheese flavor it did add 30 more calories. I will make this over and over again. On these hot Texas days..103 yesterday..I could eat this daily. - 6/27/12

4 stars as written. 5 with my changes. Perfect ingredients! This was a must try for me. I left out the mint and added a little garlic and lime juice. Sprinkled with dill weed before serving. My cucumber was gigantic so a needed a little extra buttermilk. I'll use more milk & less water next time. - 6/25/10

I made a very similar recipe recently. This needs more flavor. I used a huge amount of dill and some nutmeg. The nutmeg cuts the creaminess well, but so would something liie paprika or cumin. I also suggest grilling yourself some garlic shrimp with this. It makes the whole concept less boring. - 8/14/16

The consistency was great. I skipped the chilling step & think it would've made it better. Will do that next time. And I think I put too many scallions--it felt unbalanced on that side. I made it with 3 parts rice milk to 1 part water (dairy free) and blended in a Nutribullet. Not bad!

I'd no avocado, mint or buttermilk, so used a nugget of frozen chopped spinach and some Greek yogurt. Also added some apple juice with juice from half a lime - which made up (!) for no seasoning.
I drank it as a smoothie in a tall glass. Otherwise I'd have it in a mug.

Recipe was very easy to follow and prepare but the taste left some to be desired. As I can tell by looking at other's reviews that many people think the same, I added a little bit of sugar to mine along with salt and pepper but some of the ideas I've read in the other reviews sound really good. - 7/1/10

I did like this soup. It would be good for a company meal. Next time I will make the proportions of buttermilk and water to wqual amounts. I will also use chicken broth instead of water. I did put a shot fo Tabasco in it as I like the extra bite. I couldn't find mint so used curly parsley instead. - 6/28/10

I was excited to try this but it tastes a little boring, I added about a teaspoon of minced garlic. I will try it again but I am going to try to liven it up a little more. - 7/19/08

I would just ask if you made sure to season with salt and pepper... this makes a huge difference. without it, i think this soup is totally boring, but i salt and taste until it tastes right i tend to want to eat it all the time. just asking. :)
