The recipe should say to PEEL and SEED the cucumber. Lemon or lime juice to prevent avocado discoloration. Chives optional instead of scallions. Yogurt for buttermilk. Add diced tomato (opt). I liked OutofIdeas' suggestion to add dill. - 7/3/12

I added a squeeze of fresh lime juice and a pinch of crushed dill for a sense of Greek/Mediterranean flavor. - 6/24/08

This soup was a big hit made with greek yogurt, instead of buttermilk, I used a peeled Asian cuke, and added some lime juice along with a few sprigs of parsley while gathering mint. Sometimes I use chives if no scallons, I only added 1/2 cup water. - 7/14/15

I added a little more buttermilk, a little less water, fresh chives and cilantro and topped it with a few pieces of feta. I added a little crushed pepper, salt and hot crushed pepper. OMG -- FABULOUS. This is my second recipe with sparks and they have both been great. - 8/8/08

Guess I could get used to it. It was sort of OK! I only gave it one star and then it showed up as BAD. IF i had known 1 star was BAD I'd have rated it 2 stars. (is that only half bad? LOL) - 12/2/11

While I like this idea, the comments don't make me want to try it. And well, 2 cups of soup to serve 4 people. A half cup per person? I guess that's one way to get the calories under 100. - 3/12/15

I was not sure about the mint leaves but it added to the flavors...I too added more buttermilk and less water...I also added fat free cream cheese for a cheese flavor it did add 30 more calories. I will make this over and over again. On these hot Texas days..103 yesterday..I could eat this daily. - 6/27/12

4 stars as written. 5 with my changes. Perfect ingredients! This was a must try for me. I left out the mint and added a little garlic and lime juice. Sprinkled with dill weed before serving. My cucumber was gigantic so a needed a little extra buttermilk. I'll use more milk & less water next time. - 6/25/10

definitely peeled and de-seeded the cuke. Used lemon juice on the avocado, added a little onion (could use garlic powder, too) powder. And subbed greek yogurt for the buttermilk. Refreshing. - 7/29/18

I made a very similar recipe recently. This needs more flavor. I used a huge amount of dill and some nutmeg. The nutmeg cuts the creaminess well, but so would something liie paprika or cumin. I also suggest grilling yourself some garlic shrimp with this. It makes the whole concept less boring. - 8/14/16

The consistency was great. I skipped the chilling step & think it would've made it better. Will do that next time. And I think I put too many scallions--it felt unbalanced on that side. I made it with 3 parts rice milk to 1 part water (dairy free) and blended in a Nutribullet. Not bad!
    Thanks to @N

I made this exactly as the recipe stated--it is VERY bland. I added cumin and chili powder, which made it more palatable, but still not great. I will probably not make this again.

I'd no avocado, mint or buttermilk, so used a nugget of frozen chopped spinach and some Greek yogurt. Also added some apple juice with juice from half a lime - which made up (!) for no seasoning.
I drank it as a smoothie in a tall glass. Otherwise I'd have it in a mug.
    I'll try this again, tweak

I wanted to like this but don't care for cucumbers and the avocado didn't help. I tried a few suggestions from reviews and it still wasn't worth eating. I may try it again, but peel the cucumber next time. I'd recommend trying it because you never know. It was the cucumbers that did me in. - 8/9/11

recipe has a distinctic cucumber taste. Added lime juice, a pinch of garlic, dill weed, salt, ground pepper. Found it not what we would want. Added Epicure lemon & dill spice = picked it up.

Recipe was very easy to follow and prepare but the taste left some to be desired. As I can tell by looking at other's reviews that many people think the same, I added a little bit of sugar to mine along with salt and pepper but some of the ideas I've read in the other reviews sound really good. - 7/1/10

I did like this soup. It would be good for a company meal. Next time I will make the proportions of buttermilk and water to wqual amounts. I will also use chicken broth instead of water. I did put a shot fo Tabasco in it as I like the extra bite. I couldn't find mint so used curly parsley instead. - 6/28/10

This was good; I used fresh mint, added a little dill, some chives, and salt and pepper. It still needed something. Maybe a little feta and lime juice as the commenter below recommended? Still lovely on a hot summer's day. - 8/11/08

I was excited to try this but it tastes a little boring, I added about a teaspoon of minced garlic. I will try it again but I am going to try to liven it up a little more. - 7/19/08

I would just ask if you made sure to season with salt and pepper... this makes a huge difference. without it, i think this soup is totally boring, but i salt and taste until it tastes right i tend to want to eat it all the time. just asking. :)

I have made a similar recipe in past summers with good results. It is cool and refreshing. I pair it with an open face sandwich using a high fiber bread with light cream cheese, cucumber slices, a little cilantro and fresh ground pepper. - 6/25/08
