Ingredients
-
1 can diced tomatoes
1 can Del Monte traditional spaghetti sauce (or whatever brand you like best.)
1/4 lb. mild italian sausage
2 cloves garlic
1 cup sliced or diced fresh mushrooms
1 pound whole wheat spaghetti (1 small box)
Directions
Put a large pot of water over high heat. Cover until boiling, throw pasta in and stir to seperate. Allow to cook until al dente. (Follow directions on the box.)
Sauce:
Brown the italian sausage in a large skillet. Drain and add the diced or minced garlic. (Two tbsp. of jarred minced garlic = 2 cloves) Add diced or sliced mushrooms and cook until they are tender. Drain and add 1 can of diced tomatoes and cook until sauce thickens. Add 1 can of your spaghetti sauce and cook until hot and bubbly.
Drain noodles and serve.
Makes 6 small to medium portions. (I'm not really sure how many because my fiance and I always have leftovers after the two of us are finished.)
To make it even better, serve with a fresh salad and a cool sparkling beverage. Great with garlic toast or buttered whole grain bread.

It's funny; I bought italian turkey sausage today for the first time, and thought I'd try it in some spaghetti, with onions and mushrooms and possibly green peppers in the sauce. I was thinking about chopping up some fresh tomatoes to add to the sauce. Then I saw this recipe. This'll help guide me :) - 7/2/08
