Introduction

I have been baking my own granola for about 8 years. I started experimenting with granola recipes when I found that I could not consistently get a low sugar granola that I liked. Here is my creation. Every recipe varies slightly based on what ingredients I have in the house.

Number of Servings: 30

Ingredients

    8 cup dry Oatmeal (plain)
    4 tbsp Extra Virgin Olive Oil
    1 cup Pumpkin Seeds (whole seeds, roasted)
    1 cup, hulled Sunflower Seeds, without salt
    3 tbsp Shredded Coconut Unsweetened (Bob's Red Mill)
    1 cup, chopped Walnuts
    4 tbsp Cinnamon, ground
    2 tbsp *Flax Seed Meal (ground flax)
    4 tbsp Maple Syrup
    .5 cup (not packed) Raisins

Directions

Prepare baking pans by adding a drizzle of olive oil to the bottom. Spread oil across the surface of the pan to keep the granola from sticking.
Mix all ingredients in a large bowl, then place in thin layers (1/2 inch deep) in a baking pan. I use 3 pans in the oven at a time.
Bake at 350 degrees for 30 minutes in a roasting pan stir occasionally. Granola is done when the oats start to turn brown.
