Number of Servings: 8

Ingredients

    *4 whole boneless, skinless chicken breasts, cooked and cut in 1 inch pieces.
    *10 6 inch flour tortillas, cut in strips about 1/2 inch wide and 2 inches long (whole wheat is okay, corn will disentigrate!)
    *1 large onion, chopped
    *1 tsp canola oil
    *10 3/4 oz can fat free chicken broth
    *10 3/4 oz can 98% fat free cream of mushroom soup
    *2 4oz cans green chilies, chopped (level of spiciness at your discretion!)
    *1 egg
    *1 cup low fat cheddar cheese, grated

Directions

1) Coat slow cooker with pam or other non-stick cooking spray. Add a thin layer of broth.
2) Scatter half the tortilla strips in bottom of slow cooker.
3) Mix remaining ingrediets together, except the other half of tortilla strips and cheese, in a large mixing bowl.
4) Layer half the chicken mixture into the cooker, followed by the other half of the tortillas, followed by the rest of the chicken mix.
5)Cover, cook on low 4-6 hours or high 3-5 hours.
6) Uncover and let rest 15 minutes before serving.
7) Spread grated cheese over individual servings.

Feel free to add a cup of frozen corn and / or a can of sliced black olives to the mix for some extra flavor!

Great with some hot sauce or fresh salsa!

    This was YUMMY, I didn't add the cheese (I forgot to buy, so I topped it with some light sour cream at the end) and used whole wheat tortillas, It was very good ! Thanks for sharing ! - 8/1/08

    Incredible!
    One of my favorite things to make when cooking for groups with boys who don't think they like 'diet' food. It does have a 'mushy' texture and the tortillas do come out kinda like dumplings... but I think that makes it good! - 2/5/10
