Introduction

I had something similar at a local restaurant as a side dish and decided it'd taste good in a pita pocket so I created this recipe. Makes a great lunch or quick snack. I normally eat it in a pita pocket, but did not include that in the calories here since pitas can vary in number of calories. Ingredients

    1/2 large cucumber, peeled, seeded and chopped
    1/2 cup fat free cottage cheese
    1 scallion or green onion, sliced
    1/4 tsp. garlic powder

Directions

Peel, seed and chop the cucumber into small cubes. Slice scallion. Mix all ingredients together and serve.

    i made this last night but added some "extras" I added a half a roma tomato, dill weed, indian yogurt seasoning and salt. I didn't have green onion so i skipped that. it was a tasty, filling a low cal meal. i ate it with mini whole wheat pitas - 6/4/09
