Introduction

These great-tasting blueberry muffins are low fat and contain more fiber than regular muffins. These great-tasting blueberry muffins are low fat and contain more fiber than regular muffins.
Number of Servings: 12

Ingredients

    1 cup whole wheat flour
    1 cup raw wheat germ
    1/2 cup sugar
    4 tsp baking powder
    1/2 tsp salt
    1 egg
    3/4 cup milk
    1/3 cup unsweetened applesauce
    3/4 cup blueberries

Directions

Preheat oven to 350 degrees.
Stir together dry ingredients in a large bowl. In a different bowl mix together egg, milk, and applesauce, then add to the dry ingredients and mix lightly. Gently fold in bluberries.
Spray a muffin tin with non-stick cooking spray, and fill cups about 2/3- 3/4 full. bake at 350 degrees for 20- 25 minutes until edges are brown and muffin tops bounce back when pressed lightly.
Makes 12 muffins.

    For such a healthy recipe, this is a very tasty muffin! It could be adapted to include chocolate chips, or whatever you like in your muffin. I think I will add cinnamon next time I make them. - 6/11/12

    Excellant recipe. I used Wheat Germ with cinnamon and milled flax seed. Gave them just a hint of cinnamon flavor. When I make them again I think I will add some cinnamon. - 7/18/10

    This receipe is amazing, I put in less sugar and added a little fresh
    nutmeg and cinnamon and more berries. I did find however they took a little longer to cook.

    I changed the receipt by using 1c of unbleached flour & 1c whole
    wheat pastry flour, 3/4c wheat germ, 1/2c oat bran, 2 grated apples & added 1tsp of baking soda, 2/3 c agave. The rest is the same. (Doubled receive). It turned out fantastic!

    Great Muffins. I added 1/2 cup of unsweetend applesauce for the egg substitute, 1 tsp cinnamon, and 2 TBS finely chopped walnuts. They taste great, it'll be a quick healthy snack or breakfast treat. - 4/19/09
