Introduction
A great milky beverage that contains no milk!I tried this at an authentic Mexican get-together a few years ago, and I've been drinking it every chance I get ever since.

Ingredients

1 cup long grain rice, strained (whit rice suggested)
2 quarts of water
1 cinnamon stick broken into pieces (1/2 tsp ground if unavailable)
1 tsp vanilla (optional)
1/2 cup white sugar
Directions
1. In a large container (pitcher if you want to reuse later), combine rice, water, and cinnamon stick. Set aside overnight.
2. Puree rice mixture in a blender until smooth.
3. Strain through a cheesecloth or a fine sieve. Be sure to give an extra twist and sqeeze if using a cheesecloth to get as much of the liquid back as possible.
4. Flavor with vanilla and sugar to taste.
5. Chill and serve over ice.
Makes 8 1-cup servings.

LOGOULD
In a large saucepan, combine rice, water and cinnamon stick. Set aside for 3 hours.
After 3 hours, bring to a boil, reduce heat, and simmer for 30 minutes. Allow to cool.

My mother in law, from Mexico, taught me a TON of mexican recipes. Horchata is one of my favorites, but instead of combining everything first, put your rice and warm water in a blender and chop the rice first then add other stuff next day b4 straining. You'll get more of the rice taste coming thru! - 12/8/08
