Number of Servings: 9

Ingredients

    Small Zuchhini - 2
    Potato - 1
    Frozen Spinach - 5 oz
    Onion - 1 large
    Garlic - 2 cloves crushed then finely chopped
    Salt and Pepper to taste
    Chicken Stock (or broth) - 32 oz
    Optional: red pepper flakes, cayenne pepper, or hot sauce 1 tsp
    Optional: 1/4 cup fresh cilantro, chopped (for a nice summer-outdoor-picnic flavor)

Directions

Peel the zucchini and potato. Chop thin slices. Sautee the onions in a large pot with olive oil and a pinch of salt. Add the garlic and sautee over medium until onions are translucent. Add the stock, sliced veggies, seasonings, but not the spinach. Bring to a boil and reduce heat to low or medium. Let simmer for at least 30 min and up to an hour, or until the potato and zucchini are so soft they fall apart when touched. Add frozen spinach. Put in the blender to chop up the spinach and veggies to make it creamy, or serve it chunky. Makes eight to ten 1cup servings.

    If you're going to blend it anyway, you can always leave the skin on the zucchini and potato for added vitamins & minerals. Just be sure to wash them well.

    It is delicious even without the hot stuff :)

    MAde as directed but added dried chipotle chile powder instead of the red pepper. The smokiness of the chipotle was awesome, especially the next day. Will make again~ - 2/12/10

    I pureed the broth, including onions, garlic, and potatoes and left the zucchini and spinach in "chunks". Served this with lunch, along with a chicken lettuce salad, so I got my greens in for the day! I love adding very low calorie soups to my meals, and this one was a great addition! - 3/20/09

    Really, really good! I put a little Sriracha sauce in it too, for extra spice.
    Made creamy in the blender, but added spinach after.
    Careful putting hot soup in your blender. Mine cracked. Any tips to avoid that?

    This was absolutely delicious. I changed it slightly. I used only one zucchini and added thinly sliced carrots and chicken. I also didnt blend it at all. This cayenne pepper and red pepper really made me enjoy this soup. SO easy too. Yummy! - 3/10/11

    Definitely recommend red pepper flakes and subbed cauliflower for potato. Just had the leftovers from this recipe that I froze more than a month ago. Still so good. I actually had forgotten how good it is. I'm going to hurry and freeze more batches with the last of this season's zucchini. - 10/6/10

    Made this last night and OMG it was great. I am doing Phase 1 South Beach so Ileft out potato and added cauliflower. Also used half a bag of fresh baby spinach. Maybe a little too much cayenne but it gave it a kick and I sprinkled some parmesan cheese on top. - 7/16/10
