Ingredients

    1 pound fresh green beans, trimmed
    1 tbls extra virgin olive oil
    kosher salt
    freshly ground black pepper

Directions

1.) Preheat oven to 450 degree F. Line a baking sheet with foil. Place beans on prepared baking sheet

2.) Drizzle the beans with olive oil and sprinkle with salt and black pepper; toss gently to coat. Spread the beans in an even layer. Roast for 10 minutes.

3.) Stir beans. Roast about 10 minutes more or until beans are dark golden brown in spots and have started to shrivel.

    I've used the leftovers as a baked potato topping. Yum! I like to mix up the seasonings. My favorites: fine granulated garlic, garlic pepper, onion salt, shallot salt and smoked paprika (of course, I don't use all of those at the same time!). Mix garlic with oil instead of sprinkling for no burn. - 9/10/09
