Ingredients

    2 teaspoons olive oil1/2 cup slivered almonds1 tablespoon almond liqueur2 cups rice, cooked1/4 cup green onions, minced

Directions

1. Heat oil in skillet; add almonds and saute just until golden.

2. Add liqueur and rice to skillet. Stir until heated. Add onions; stir to mix well.

Makes 4 (1/2 cup) servings

    I used brown rice and replaced the liquor with almond extract - very good! - 7/13/07

    Made this like most others subbing brown rice for white and almond extract for liqueur, but may sub sesame oil for olive next time as well. Served with grilled shrimp it was delicious. - 5/3/12

    I do have brown rice & almond extract & some almonds so sounds like something to go with our chicken tonight. Don't miss white rice at all..but it's staring at me in the pantry! - 2/8/12

    Plan on also replacing the white rice with brown and using almond extract since I don't have any almond liqueur. - 2/7/12

    Now that someone tried this with brown rice I will definitely give this a try tonite, in fact. I don't have white rice in the house since we started out lifestyle change with my weight problems & dh's diabetes & hi cholesterol. This sounds like a great way to liven up brown rice.     Very tasty and easy way to perk up plain rice! I used a tiny bit of sesam oil instead of the almond liqueur. Yum! - 3/13/07
