Introduction

Ingredients

    1 can refried beans (435g)
    1 can corn kernels (400g) (drained)
    1 can red kidney beans (400g) (drained)
    1 can lentils (415g) (prefer Sanitarium savoury lentils)
    1 jar taco sauce (250g)
    2-3 tomatoes, diced
    1 - 1 1/2 cups diced capsicum

Directions

Makes 4 huge servings or 6 smaller servings

Heat refried beans in saucepan over medium heat, stirring, until smooth. Add all ingredients. Stir until well combined. Heat until boiling.

    Modified the recipe for what I had on hand... no lentils, taco sauce or tomatoes, but a jar of salsa instead.

    I love this. A little too much. lol. I had to freeze half for later so I don't eat it all.

    Very Good
    All my kids ate this. Couldn't get my wife to try it, but my kids and I really liked it. This made WAY more than 4 servings, though. - 2/1/09

    Incredible!
    I didn't have the capsicum and it was still great! Had it with whole wheat tortillas at lunch. Really kept me full for the rest of the day. - 9/12/08
