Ingredients

    1 lb Whiting(about 3 fillets) or any kind of perfered white fish
    1 can (14oz) of diced tomatoes
    1 cup chopped green bell peppers
    1 cup chopped onion ( white or yellow)
    1/2 tsp of salt
    1/4 tsp of dried basil
    1 tbsp of olive oil

Directions

preheat oven to 350. Place fish in a non-stick baking dish and set aside. Heat olive oil in sautee pan on medium heat. Add onions and peppers and sautee untill soft. Drain juice from tomatoes and add to pan. Add salt and basil and continue heating until tomatoes are warm. Pour mixture over fish and bake for 20 minutes or until fish is flakey. Serve over brown rice or wheat pasta.

    This was very good; I used fresh green tomatoes instead of the canned stuff and bumped up the flavor with habaneros and jalepenos...very, very good :) - 8/29/11

    Incredible!
    This was great, I took one piece of al. foil. Put all veggies in, fresh tomato's plus yellow squash plus fish. Added minced garlic and red potato's and lemon slices No extra juice. Folded foil together and baked for 30 minutes. We used to make this when I lived on a boat-Awesome, great recipe. - 1/21/10

    I made a single serving; used a small fresh tomato and a dash of Worcestershire sauce instead of the salt, then I microwaved it instead of baking. 5 minutes from start to eating, and it was very good with the brown rice. - 12/17/07
