Introduction

A thick soup, almost like a stew. A thick soup, almost like a stew.
Number of Servings: 7

Ingredients

    Green lentils, 1 cup
    water, 5 cups
    salt, 1/2 tsp
    butter or margarine, 2 Tbsp
    chopped onion, 2 cups
    grated carrot, 1 cup
    canned tomatoes, with juice, mashed, 28 oz
    garlic clove(optional)
    granulated sugar, 1 tsp
    pepper1/4 tsp
    dried basil, 1/2 tsp
    dried marjoram, 1/2 tsp
    chili powder, 1/2 tsp

Directions

Cook lentils in water and salt about 30-40 minutes till tender and water has become thick.
Meanwhile, heat butter in large pot. Add onion and carrot, and saute till soft. Add to this mixture the tomatoes and remaining ingredients, and let simmer for about 30 minutes. Stir occasionally. When this is done, add cooked lentils and water to this, cooking about 5 more minutes.
If you want a non vegetarian version, cooked sliced sausage added to this makes a nice addition. Makes about 8 1 cup servings.

    Really enjoyed this! First time to cook lentils..i did add extra garlic (4 total). Next time will make with veg broth. For leftovers tomorrow i will serve over brown rice. Thanks!! - 1/29/10

    Oh My! If I could add 5 more stars I would!!! I did add more garlic (total 3 cloves) and I used some leftover chicken and veg broths. This is my new favorite!!! Thank you so much for sharing this one! - 2/4/09

    This was excellent although I added orzo for a bit more of a "heft" to the meal. I also used fresh marjoram and basil from my garden. Overall, a great fall dish! - 10/28/08
