Ingredients

    3- large egg
    1 cup- Mushrooms
    1/2 cup- Green Peppers
    3 dash- Salt
    3 dash- Black Pepper
    1/2 cup- Cheddar Cheese crumbles
    3 tbsp- Sour Cream
    3 tbsp- Salsa
    1/2- Avocado ( thinly sliced)
    1 tbsp- margarine (70%) vegetable oil spread


Directions

Be sure to have your utensils ready:
1 large skillet
1 spatula
1 medium size bowl
1 fork

Prep time-10 minutes
* Chop mushrooms and green peppers
* Slice avocado into thin slices
* Scrambe eggs in a bowl and add 2 dashes of salt and 2 dashes of pepper

Cooking time- 15 minutes
Step 1- Heat skillet and add 1/2 of the table spoon of margarine until hot

Step 2- Add mushrooms, green peppers, 1 dash of salt, 1 dash of pepper and mixed until cooked lightly

Step 3- Remove from skillet and sit to the side

Step 4- Wash skillet and add remaining margarine until hot

Step 5- Add the eggs and the remaining 2 dashes of salt and pepper and allow to cook, checking the skillet to ensure the eggs do not stick

Step 6- Add the mushrooms and green peppers to the eggs and 1/4 cup of cheddar cheese crumbles to the eggs on one side of the skillet and allow to cook

Step 7- Add pieces of avocado on top of the cheddar cheese and flip the other side of the omlet over like a sandwich

Step- Remove from the skillet and serve!!!

    Great Recipe. To make it even healthier, why not use olive oil vs. margarine. Most margarines have soy(not good if you have thyroid issues and many have trans fats. - 6/24/09

    I wasn't happy with several (options) for this omelet. The three eggs are ok but would use pan spray (olive oil spray), chiobani rather than SOUR CREAM, Ditch the salt (high Na), and use spices in place of salt (pepper is always ok), and probably fry the shrooms, peppers in advance using garlic - 5/15/12
