Introduction

Baked potatoes stuffed with seasoned cottage cheese are a lavish low-fat, low-cholesterol, low-sodium treat. Baked potatoes stuffed with seasoned cottage cheese are a lavish low-fat, low-cholesterol, low-sodium treat.
Number of Servings: 8

Ingredients

    4 medium baking potatoes
    3/4 cup low-fat (1%) cottage cheese
    1/4 cup 1% milk
    2 tablespoons fat-free plain Greek yogurt
    1 green onion, chopped
    3/4 teaspoon herb seasoning
    4-6 drops hot pepper sauce
    2 tablespoons shredded reduced-fat Cheddar or Parmesan cheese

Directions

1. Prick potatoes with fork. Bake at 425º F for 60 minutes or microwave on high until fork is easily inserted.

2. Cut potatoes in half lengthwise. Carefully scoop out potato leaving about 1/2 inch of pulp inside shell. Mash pulp in large bowl.

3. Mix in the remaining ingredients except cheese. Spoon mixture into potato shells.

4. Sprinkle each top with 1/4 tablespoon cheese.

5. Place on baking sheet and return to oven. Bake 15-20 minutes or until tops are golden brown.

Yield: 8 servings--Serving Size: 1/2 potato each

    Loved this! I roasted a head of garlic along with the potatoes and then squeezed that into the potato mixture. (Slice off the top, place on tinfoil, drizzle with olive oil and wrap in the tinfoil before placing in the oven) - 1/29/08

    Absolutely delicious, and I'm not a fan of cottage cheese. For seasoning- I used oregano, paprika, salt, & pepper. I also added a little part skim mozz cheese on top (with the parmesan). Can't wait to make this again - YUMMMMM!! - 1/21/08

    Try the same recipe with zucchini in place of the potato. It's great if your watching your carbs or are a diabetic. Can be wrapped in foil & cooked on the grill. Also, add some ground turkey or chicken to make it a complete meal. - 7/9/09

    These potatoes are so flavorful and creamy. I put the potato insides and other ingredients in my mixer and mixed them to make them a little creamier. They really fluffed up and made extra filling. Everybody liked them, even my husband who hates baked potatoes. - 3/2/09

    Versitle - my husband said, "I think you should make potatoes like this all the time!" My own substitutions include: canola oil salad dressing for margarine, pinch of basil for dill & 1/4 tsp. ground chipotle pepper for hot pepper sauce. My 3-year-old doesn't like potatoes but she wolfed these down! - 1/17/08

    I may have missed this tip along the way since there are sooo many comments, but you can cut some prep time by microwaving the potatoes the first time around - since they go back in the oven they crisp up just fine on the outside. - 12/29/09

    I nearly tripled the dill because I love the fresh taste & they tasted fabulous! The prep time is a little long, but worth it. And I was very pleased that I couldn't at all tell that there was cottage cheese in there! - 3/6/08

    I have been using a mixture of cottage cheese, blended with garlic pwdr and dill (or the seasonings of your choice), as a healthier alternative to sour cream on baked potatoes for years. Thanks for the recipe. - 4/4/08

    No one knew these potatoes had cottage cheese in them!! I am not a fan of dill; I used an Italian mix one time, Hyssop Z'aatar the second time. I used surachi (I think) hot sauce because that was what I had. Excellent, both times! Thanks. - 10/27/09

    I didnt read through all the comments but a few mentioned the lengthy time in prepping this, and I wanted to mention if you are short on time you can bake a potato in the microwave. Just cut a T slit in the top of tator and spray with pam or canola oil spray and nuke about 5-7 mins; use fork test! - 2/20/10

    I have always liked cold cottage cheese on my baked potato instead of sour cream. I have also mixed salsa in with it. This recipe was great, my husband even liked it and he is a big butter only on baked potato kind of guy. I cut out a lot of time by microwaving the potato's instead of the oven. - 1/15/10

    It was hard to find low sodium cottage cheese, so I also used some fat free sour cream. Interesting variation on an old Weight Watchers recipe from the 1970s though. If you use smaller potatoes, you can actually have a whole potato. - 8/9/09

    I will add this one to my recipe meal planner it sounds really good. I am always looking for new ways to prepare "the regulars" and this sounds good. I usually put a little sour cream in my potatoes and this sound like it will be very tasty. I like the combination of herbs, too. - 6/23/09
