Ingredients

2 Tbsp olive oil
8 oz Trinity Mix or (3oz diced onion, 3oz diced peppers and 2 oz diced celery)
1 Tbsp fresh or roasted garlic
20 oz ground turkey
1 packet chili seasoning packet
1 (16oz) can chili beans, undrained
1 (10oz) can diced tomatoes with green chiles, undrained
1 (8oz) can tomato sauce
Directions
Makes six servings
1. Preheat large saucepan on medium-high 2-3 minutes. Place oil in pan; swirl to coat. Add trinity mix and garlic; cook 6-8 minutes, stirring often, until browned.
2. Reduce heat to medium; brown ground turkey 5-7 minutes stirring until it crumbles and is well browned.
3. Stir in remaining ingredients. Bring to boil; reduce heat to low and simmer, stirring occasionally, until thoroughly heated and flavors are well blended.

I just realized I forgot to add the garlic when I made this. I didn't have cheese, so I sprinkled crackers on top. The flavor was good, but not the best chili I've ever had. The veggies were definitely different from what I have known growing up in Texas, but it's a good way to sneak in veggies. - 4/7/11
